In theory we mention that some organisms are slow gelatin liquefiers. what about an organism might make it a slow gelatin liquefier?

If the organism does not produce many enzymes, it might be slower to liquefy gelatin than other organisms. Another reason could be that the enzymes that the organism does produce simply do not have an affinity for gelatin: this would also slow the rate at which the substance is made into liquid.
